Mangalorean Catholic Cuisine

Hello dear readers! I am back with the third and final part of the article on Mangalorean cuisine for the Indian Food trail series. Today I will take you on a culinary journey into Mangalorean Catholic cuisine in particular. As I had mentioned in the first part of the Mangalorean Food series, Mangalorean cuisine is a blend of local flavours from each community. Mangalorean Catholics have their roots in Goa and are descendants of Goan Catholics who migrated from Goa between 1560-1763 due to the Goa Inquisition, the Portuguese ? Adil Shahi wars and the Portuguese ? Maratha wars (read more) and hence our culture is a blend of Goan & Mangalorean cultures. Mangalorean Catholic Cuisine is adapted from the local cuisine of South Canara but retained the Goan/Portuguese influence in a large variety of their food.

Special Surmai Curry

Mangalorean Catholic cuisine is often synonymous with Dukra Maas (Pork) and Sanna (Fluffy idlis with yeasted batter). Pork is cooked in a variety of ways ranging from Bafat, Indad (Vindaloo), Sorpotel or Kaleez Ankiti (pork offal cooked in spices). Mangalorean Catholic cuisine also includes many dishes using mutton (goat meat), beef and a whole range of seafood (fresh catch or dried fish). We particularly love our coconut based fish curries.

A traditional Mangalorean Catholic household begins their day with prayers and a hearty breakfast mostly made of rice ? usually rice batter that is steamed (Sanna, Idli, Mutlim) or fried (bhakri, appam, pan polay, polay). Pou (beaten rice) is also part of the breakfast menu in the form of Godaso Pou (beaten rice with fresh coconut & jaggery) and Theek Pou (beaten rice seasoned with spices). Lunch consists mostly of seafood.Fish curry & boiled rice (white/brown/red rice) accompanied by a vegetarian side dish cooked Thel Piao (oil & onion) style or fugad style (vegetables cooked in spices, garnished with grated coconut and seasoned with mustard, garlic & curry leaves). Shredded/chunky mango (or lime) pickle or a papad completes the meal. Sometimes the fish curry is replaced by a simple Daliso Saar which is spiced lentils of a watery consistency. Fish marinated in Meet Mirsang (salt & chilli paste) is fried on a slow flame usually in coconut oil till crisp (if desired) and served.

A typical Mangalorean Meal

Kube Sukhe (Clams/cockles cooked in a fugad style) or Prawn Masala Fry (fried prawns) are also much loved meal options along with fish curry and rice in Mangalorean Catholic cuisine. Sometimes clams or prawns are cooked in combo curries along with vegetables or rice dumplings, for example Kube Mutlin (clams with mini rice dumplings). Since fish and meat are dominant in our daily meals, there are few vegetarian dishes that we prepare apart from the thel piao and fugad style dishes. Usually its the vegetarian combo curries that feature a vegetable and a legume. For ex: Valchebaji Ani Guley (Malabar Spinach & Black Eyed Peas Curry). Since pepper grows in abundance along the coast, Mangalorean Catholic Cuisine has curries using pepper such as jeere-miri (cumin & pepper) or losun-miri (garlic-pepper) or stew curries (with home made stew powder that is a combination of pepper, cumin and turmeric).

Mangaloreans prepare a whole lot of breads that are usually steamed and often replace rice during meal times. The best part about these breads is that they double up as a breakfast cum lunch accompaniment. Here?s the recipe of regular lemon sized rice dumplings that are very simple to prepare yet are slowly vanishing from most modern kitchens today.

Mutlim

Multim Recipe
Prep (soaking) time: 4 hours | Cooking (grinding+steaming) time 30-40mins | Yield 15-17 dumplings

Ingredients:
1/2 kg white or red boiled rice (ukda chawal) * see notes
1-1/2 cups grated coconut
salt to taste
Method:
1. Wash and soak the rice for at least 3-4 hours (for best results). Drain and keep aside. If you are using a traditional grinding stone, grind the rice and salt to a slightly coarse, thick & dryish paste. Add the coconut towards the very end (the coconut should not be fully ground). If you are using a mixer grinder you may need to add some water (sparingly) to grind the rice & coconut ? the batter may be slightly thinner in this case.
2. If you have a bit of a thin batter, transfer it into a non stick pan and cook on a medium low flame stirring until all the excess moisture evaporates and you have a lump. You know it?s ready when the base begins to brown slightly. Turn off the flame and transfer onto a large bowl. When it is cool enough to handle, quickly knead to achieve a smooth surface.
3. Grease your palm with oil if required and pinch out lemon sized balls of the dough. Roll to form a smooth surface and form a dimple with your thumb. Continue until all the dough is used to make mutlims.
4. Transfer all mutlims into a bowl, cover with a cloth and steam for 20-25 minutes. The mutlims are done when their surface is no longer sticky.
5. Serve hot with chicken or mutton curry of your choice.

Notes:
1. Boiled rice is different from cooked rice. Boiled rice is a variety of rice that is involves partial boiling of paddy before it is de-husked and sold. Boiled rice with bran is called as brown/red boiled rice and that without the bran is called as white boiled rice available at most grocers by the name Ukda Chawal (in Hindi) or Katsambar (in Kannada) or Ukdo Tandul (in Konkani)
2. You can make the sweeter version of these dumplings by stuffing a jaggery & coconut mixture into the dough just before steaming. These are known as god mutlim.

In the olden days when families were large and affordability was low, fresh fish was replaced by dried fish/shrimp. A typical meal in a Mangalorean Catholic family of moderate means would be Pez ani Galmbyachi Chetni or Karyachi Chetni (rice congee served with a chutney made of shrimp or dried fish). Dried fish was often cooked along with vegetables that have longer shelf life than others such as Mogem (Field Marrow/Madras Cucumber) or Kualo (Ash Gourd/White Pumpkin/Winter Melon).

Tea time snacks range from seasonal ones to those made all year around. Most often, the breakfast menu undergoes miraculous transformation and gets served for tea. Portha Polay (neer dosa with a jaggery & coconut filling) is a perfect example of this. Sanna or appams are also dipped in tea/coffee or served with honey or ghee and sugar and eaten cheerfully. Traditional tea time snacks include rice Maani (rice flour pudding sweetened with jaggery & coconut milk) or Mandas (thick rice and cucumber cake) among others. Sweet mutlim (dimpled rice dumplings stuffed with jaggery & coconut) also make their appearance once in a while. The more modern forms of tea time snacks in Mangalorean Catholic cuisine include the bread pudding which is made up of leftover bread, eggs, milk, nutmeg & sugar.

Maani

Dinner is almost always the same as lunch or in many homes its the rice congee to keep it real simple. Rice congee eaten with pickle or leftover fish/vegetable curry/fried fish from lunch is commonplace.

Since Mangalorean Catholics do not celebrate a lot of festivals, a few special ones including occasions such as weddings or birthdays call for special menus. Besides Christmas & Easter, the feast of the Nativity of the Blessed Virgin Mary (BVM) or the birthday of Mother Mary is celebrated with great gusto on September 8th every year. Each of these occasions have special menus consisting of meat and vegetables, however the feast of the BVM is celebrated coinciding with the local harvest feast and hence we have a festive meal known as the ?novein jowaan? (new/first meal) which is made up of a pure vegetarian fare consisting of odd numbered dishes. The star of this spread is the Alun Dento (stems of the colocasia/arbi plant and tender stalks of the green amarath leafy vegetable cooked in a coconut gravy) which is eaten with Sanna. The novein jowaan is again a time of togetherness when the whole family gathers from near & far to pray and eat together. The meal is followed by a leisurely afternoon spent well in chewing sugar canes that are distributed to kids after the Mass in church.

A month before Christmas, Christians in Mangalore get busy in the preparation of sweet meats and goodies called as the ?Kuswar?. It is a traditional platter of sweets and savouries, usually deep fried, that have a long shelf life. From kidiyo (kulkuls/dough curls), gulio (sweet rice marbles), neurio (/karanji/sweet puffs), kokkisan (rose cookies) pathekan (banana chips), tukdi (diamond cuts), thandhlache laadu (roasted rice laddus) and plum cake ? everything is home made. However, modern lifestyle and lack of free time to make these goodies at home has resulted in a lot of people purchasing the eatables from bakeries. In the olden days Kuswar was prepared at home in bulk by the ladies and stored in large aluminium dabbas and distributed amongst close family & neighbours. This tradition was lovingly followed by my paternal grandmother and my mother and the Kuswar was distributed among the neighbouring families. In return we would get a similar platter of goodies during Diwali and Krishna Janmashtami.

Kuswar ? Mangalorean Christmas Sweets

True to the adage ?the great Indian wedding?, Mangalorean Catholic weddings are a grand affair with a lot of attention paid to every fine detail. From the bridal finery, venue, decorations, guest list to the food, everything is meticulously planned and executed. Wedding ceremonies are elaborate with a Roce ceremony (pre-wedding function on the previous day (or one/two days)) preceding the wedding day and the Porthapon (grand dinner for close family members of the bride & groom) a day or two after the wedding. There are separate menus for each occasion and below is a traditional curry made of ash pumpkin that is served on the day of the Roce ceremony. Called as the ?Pollu? or ?Polov?, decades ago it used to be served without mutton/goat meat added to it. Today it is served as a non vegetarian curry along with a large plain bun and red nutritious boiled rice. Traditionally the meal that was lovingly prepared by close family and neighbours was served on a ?shirothi? (banana leaf). Today caterers handle bigger crowds and maintain a buffet system of serving the food which includes the polov, pork bafat or sorpotel and plantain (raw banana) sukka among others.

Mangalorean Wedding Style Polov

The lavish spread served at the Wedding banquet is undertaken by caterers today and usually consists of a fine spread of non vegetarian items, especially pork, chicken, mutton and a whole range of salads, pulaos or biryanis and desserts. The one item that I used to always look forward to as a child (and still do!) is the typical Sweet Pulao served with Plum Chutney (Date & Raisin Chutney). Today I make it at home whenever I crave for it, for I feel that the best way to recreate the tastes of your childhood is to form a strong bond with your culinary heritage and learn to make them before the recipes are lost forever.

Mutton Polov Curry

Birthdays, anniversaries and such simple yet important occasions are celebrated with the whole family and hence range from simple starters to elaborate dishes ? depending on the size of the crowd and the helping hands available. Typical family gatherings involve men and women who enjoy hard drinks or wines (especially home made wines) with starters such as the pork salad or chicken lollipops and the rest of the bunch who prefers to simply dig into the lovely spread of biryanis or pulaos, chicken or meat curries, salads and cutlets followed by desserts ranging from kheer/payasams or ice cream. Since cutlets are almost always present on a party menu, here?s a recipe of fish cutlets just for you.

Fish Cutlets Recipe

Prep time: 30 min

Cook time: 10 min

Yield: 14

Main Ingredients: fish

Ingredients

  • Boneless fish - 500gm (Ghol or Shark)
  • Cumin powder - 2 tsp (jeera powder)
  • Pepper powder - 1-1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Lime Juice - 2 tsp
  • Salt to taste 1 tsp (or to taste)
  • Water - 1/2 cup
  • Bread slice - 1 large
  • Egg whites - 2, beaten - for coating
  • Oil for shallow frying
  • To be finely minced
  • Onions - 2 medium sized
  • Green chilies - 2-3 small (or to taste)
  • Ginger - 1-1/2 inch
  • Coriander leaves - 5 tbsps, finely minced
  • Mint leaves - 2 tbsps, finely minced

Method

  1. Wash the fish pieces with salt & turmeric (to remove the fishy smell) and allow to drain on a colander. Marinate it with 1 tsp cumin powder, 1 tsp pepper powder, 1/2 tsp turmeric powder, salt & 1 tsp lime juice. Keep aside for 15-20mins.
  2. Finely mince each of the ingredients mentioned under 'To be finely minced'. Heat oil in a non stick pan and fry the ginger, green chillies for a couple of seconds and then add the minced onions and fry till they turn pinkish. Add the minced coriander and mint leaves and fry till you get a nice aroma (takes about 12-15 seconds). Toss in the remaining cumin & pepper powders and lime juice, stir and turn off the flame. Allow this mixture to cool.
  3. Boil/cook the marinated fish pieces with 1/2 cup of water till the pieces are tender and almost all the water has been absorbed/evaporated - a little moisture should be retained. Let the fish not get too dry or else it will lose its juiciness and flavour. Remove onto a plate, allow to cool and mince it finely and evenly (for best results pulse it in a food processor/mixer grinder with a mincing blade).
  4. Transfer the minced fish in a large bowl, add the fried onion mixture and mix well. Adjust salt to taste. Try to shape the mixture into balls - if they don't hold shape, then wet the bread slice lightly (with about 1tbsp water), mash it & add it to this mixture. Form a lemon sized ball and flatten it in the centre of your palm. Continue to make balls until the mixture is used up.
  5. Heat oil in a non stick frying pan, gently dip/coat each cutlet in the egg whites and fry the cutlets on a medium flame till golden brown on both sides.
  6. Serve hot as a meal time accompaniment or as a starter along with ketchup or dip of your choice and a garnish of tomato wedges, onion rings and lime slices.

Tips

  • First timers please note: Do ensure that you check for bones after step#3 even if you have purchased boneless fish. Tiny pieces of broken fish if present can get stuck in the throat while you eat them - totally avoidable!!
  • If you are using frozen fish make sure it is properly thawed at room temperature or it will leave fishy smelling water into the mixture making it soggy and unsuitable for shaping up into cutlets.
  • If you are adding more than 1 slice of bread, adjust the spice and salt accordingly.

Tropical Storm Bolaven made landfall on Aug. 28 and has been moving quickly over land while undergoing a transition. NASA's Terra satellite captured an image of the remnants of the ex-tropical storm mostly centered over eastern China.

The Moderate Resolution Imaging Spectroradiometer (MODIS) on NASA's Terra satellite captured this natural-color image of Tropical Storm Bolaven on August 29 at 0220 UTC. Some clouds still remain over North Korea and extend over the Sea of Japan as Bolaven's remnants continue speeding to the north-northeast at 29 knots (33.3 mph/53.7 kmh).

The Joint Typhoon Warning Center issued the final bulletin on Bolaven on Aug. 28 at 2100 UTC (5 p.m. EDT/6 p.m. on Thursday, August 30, 2012 Asia/Pyongyang local time). Bolaven's maximum sustained winds at that time were near 35 knots (40 mph/65 kmh) and have weakened since. It was centered about 350 nautical miles (402.8 miles/648.2 km) north of Seoul, South Korea near 41.6 North and 126.2 East.

According to Associated Press, Bolaven is responsible for the deaths of twelve people, eight of them fishermen. Bolaven left about 200,000 households in South Korea without power, but damages in North Korea are unknown. On Aug. 29, Bolaven's remnants were moving over eastern Siberia toward the Sea of Japan.

WATCHING THE SHOW: Mitt Romney, trying to connect

TAMPA, Fla. (AP) ? If the presidential election were held today, Romney and Obama would be more or less tied, the latest polls show. But on one voter test, Obama has a clear advantage:

Who would you rather have a beer with?

Or, if you don't drink (as Romney doesn't), who would you rather have a glass of lemonade with? Or take with you on a road trip (with or without your dog)? Or invite over for dinner?

Simply put, there is a likability gap.

This may seem trivial compared to questions like, say, which candidate you think will better revive the economy or safeguard the nation's nuclear weapons. But election after election has demonstrated that how voters feel about their candidate matters. A lot. It buoyed Ronald Reagan and helped sink John Kerry.

Likability has become a political buzzword that stands for something deeper. More like affinity. Empathy. How well does he or she connect? How much does he understand people like me?

There are Republicans who think this will be the deciding issue for Mitt Romney. He has about as good a playing field as a challenger could hope for, yet has not broken past the president. The election, they believe, may well turn on whether Romney can use this week's convention and the fall debates to really connect with voters in a way he has not yet been able to.

Democrats see this as Obama's core asset. Even in these hard times, voters feel he gets their plight better than the rich guy does. Asked which candidate better understands the problems of people like you, Obama beats Romney among registered voters 51 to 36 percent in the latest AP/GfK poll. Some 53 percent of adults hold a "favorable" opinion of the president, compared with just 44 percent who view Romney favorably.

And that is a president who isn't actually all that touchy-feely himself, having at times been compared to the "Star Trek" alien Mr. Spock, who suppressed emotion in order to solve problems. In fact, Obama's personal ratings are lower than most presidential candidates in recent elections, notes polltaker Andrew Kohut. They are just better than Romney's.

That is Romney's challenge.

CAN HE persuade voters to feel comfortable enough with him to turn out Obama? Not just to agree with him on issues but to trust him with their futures? That is why likability is about a lot more than having a beer.

It is about addressing what The Economist, a business-oriented British newsmagazine, editorialized as their "main doubt" about Romney: "Nobody knows who this strange man really is."

One striking element of this long campaign is how little Romney did over years of campaigning to really introduce himself, apparently not wanting to distract from discussion of the weak economy.

But Romney and his campaign were on course to use this convention to "warm up" his image. The candidate and his wife, Ann, sat down with Fox News at their home in New Hampshire the other day.

The correspondent, Chris Wallace, shared their pancakes as Ann described how Mitt had ironed his own shirt just that morning. "I noticed he was doing the laundry last night," she disclosed.

For his part, Romney did what he could to address the issue: "Remember that Popeye line, 'I am what I am and that's all what I am.'" What voters really want, he says, is effective management of the economy and for that he is your man.

In another interview, published by Politico on Monday, Romney acknowledged his likability problem but blamed it on the waves of attack ads Obama and his allies have launched against him (although his personal ratings were low even before the barrage).

He tried to turn the issue around on Obama, calling him a nice guy but a failed president.

In other words, American public, you liked Obama as a candidate but are disappointed in him as a president, while I, Romney, may be disappointing as your candidate but will deliver as your president.

Jon Stewart scoffed when George W. Bush (at that point a teetotaler) was described as a guy you'd love to have a beer with. I don't want a president I can have a beer with, Stewart said, "I want my president to be the designated driver." Given the highway pileup the American economy has just been through, Stewart's quip isn't all that far from Romney's campaign argument.

But can likability or affinity be separated from issues and effectiveness? That is becoming one of the principal questions of this campaign.

The question is sometimes posed as if managing the economy, on which Romney scores better, is different from the personal qualities that Obama scores better on. Some Republicans argue that Obama's personal ratings are all that keep him afloat amid the economic wreckage.

But that misses the point, says one Democratic consultant. Those personal qualities may actually be a way some voters connect politics to their economic facts of life.

"If you are part of the working class and you believe that the deck has been stacked against people like you for a decade or so," this consultant said, "who is likely to be the more 'desirable' remedy for that ? the financial CEO who 'understands' the economy or the guy you think is fighting for people like you?"

Which is why fighting for you is an Obama campaign mantra.

IN TRYING to overcome this, Romney is banging into a pretty deep vein of American political feeling. Ever since Andrew Jackson let his supporters traipse mud through the White House, there has been a resistance to letting the patricians back in power.

It took a huge economic crisis for Americans to elect the Hudson valley gentryman, Franklin D. Roosevelt. Herbert Hoover in fact was a good man, just a failed president, which is exactly what Romney is trying to say about Obama.

Romney's team has been planning to use the convention to highlight Obama's failure, as they see it, without denying the president's likability ? and their own candidate's competence, as they see it, while acknowledging the need to humanize him.

This highlights the risk they have taken by waiting until so late in the campaign to try to personalize the candidate. Because Hurricane Isaac has intervened, in more ways than one.

On the obvious level, it has disrupted and overshadowed the convention so far. It has created a conversation about the last Republican administration's handling of a natural disaster when Romney would like to talk about the present Democratic administration's handling of the economy.

But as if to confirm that he is what he is (to channel Popeye again), the hurricane has created the kind of test for Romney that campaigns so often throw at candidates, a sudden change of terrain when the campaign was in the middle of doing something else.

These moments can be opportunities. What better chance to project empathy and connection than a looming threat to life and property? And Romney, Ann at his side, seemed to start out that way. The couple's thoughts, he said, were with the people in the storm's path, and he expressed hope that "they're spared any major destruction."

A more empathic politician might have left it at that, as his running mate, Paul Ryan, did. But Romney kept going, effusive about the convention and how it would go on despite the storm.

"I like my speech. I really like Ann's speech," he said. "Our sons are already in Tampa, and they say it's terrific there ? a lot of great friends. And we're looking forward to a great convention."

Which, if his ear for connecting with people is as tin as it seems to be there, might be somewhat less likely than he hopes.

Chicago ? Gov. Pat Quinn on Tuesday rejected a bill to expand gambling in Illinois that would have made way for a land-based casino in Chicago, saying the proposal lacked sufficient regulatory oversight.

With his two immediate predecessors in prison, the Chicago Democrat said integrity must be a hallmark of the gambling plan, which also proposed establishing four new riverboat casinos and allowing slot machines at racetracks.

The most glaring omission from the bill "is the absence of strict ethical standards and comprehensive regulatory oversight. Illinois should never settle for a gaming bill that includes loopholes for mobsters," Quinn said in a statement announcing the veto.

He urged legislators to work with him on its shortcomings, although the bill?s House sponsor said his attempts to meet with Quinn have been rebuffed. Rep. Lou Lang, D-Skokie, predicted there would be enough House votes this fall to override Quinn?s veto.

At a suburban Chicago appearance late Tuesday morning, Quinn rejected that forecast.

"That veto will be sustained," he told reporters. "I think I did the right thing."

Supporters of the bill estimated the expansion could have brought in up to $1 billion a year, boost tourism and create 100,000 jobs for the state. Chicago Mayor Rahm Emanuel supported the establishment of a city casino. Opponents meanwhile warned of market saturation and raised concerns about the social costs.

The proposal would have established a city-owned Chicago casino with spots for 4,000 people to gamble at once. It also would have added riverboat casinos in Danville, Park City, Rockford and an undecided location in Chicago?s south suburbs. Each riverboat casino would have had 1,600 gambling positions and allowed Illinois? 10 existing casinos to grow.

Quinn, who isn?t opposed to gambling on principle, had said all along that he wanted a bill with stronger ethical protections. That includes barring the gambling industry from making political contributions. He said the proposal has "too many defects" for him to consider using his amendatory veto powers to change it.

"It?s one thing if you had to make some technical changes here and there," Quinn said Tuesday. "This bill just falls way short of what the people of Illinois need when it comes to ethics in government."

In his veto message, Quinn took aim at the proposed Chicago casino, claiming the bill would have allowed it to play by different rules. He said the Illinois Gaming Board wouldn?t have the same regulatory authority over the Chicago outlet as it holds over other casinos in the state and that the city casino would not have to follow the state?s procurement code in handing out contracts.

That would leave taxpayer-financed contracts "vulnerable to organized crime, unsavory influence and potentially overpriced vendors," Quinn wrote.

In earlier responses to the governor?s critique, lawmakers offered follow-up legislation to address some of the concerns. However that wouldn?t be considered unless the initial law is signed, and Quinn has said he?d rather get all the legislation signed at once.

Lang said he would seek an override in the fall legislative session and dismissed the suggestion that Quinn might be open to discussing differences with the legislation?s authors.

"The bottom line is he doesn?t want to sign a gaming bill," Lang said. "If he had language to propose, he would have proposed it."

Quinn also criticized the legislation for providing too little support for public education. Past gambling expansions have been designed to bring in more revenue for public services such as schools, but the 1991 law that created riverboat casinos was intended to help economically depressed cities.
